2 pounds ground beef
1 pound sausage
6 slices bacon, diced
3 cans (15 oz.) chili beans, drained
1 can (15 oz.) chili beans in spicy sauce
2 cans (28 oz.) diced tomatoes
1 can (6 oz.) tomato paste
1 large onion, diced
3 stalks celery, diced
1 green pepper, diced
1 red pepper, diced
1 green chile pepper, diced
4 cubes beef bouillon
1/2 C beer
1/4 C chili powder
1 tbsp. Worcestershire sauce
1 tbsp garlic, minced
1 tbsp. oregano
2 tsp cumin
2 tsp hot sauce
1 tsp basil
1 tsp italian seasoning
1 tsp salt
1 tsp pepper
1 tsp cayenne
1 tsp paprika
1 tsp sugar
shredded cheese

1. Heat large stock pot, cook ground beef and sausage until browned, drain
2. Add the rest of the ingredients, except the shredded cheese
3. Simmer for 2 hours, stirring occasionally
4. Taste, add salt/pepper/spices/chili pepper as necessary
5. Simmer longer, the longer it simmers, the better it tastes
6. Serve in a bowl with shredded cheese on top

Also, not an exact science, it's chili. Put whatever you want in. Personally, i hate beans so i skip those, and I don't generally measure my spices, I just stop when it feels good. Taste testing is key to flavor adjustment, but make sure you give the flavors time to simmer together before you make huge alterations! :)
