Caramelized Onions:
1/4 C butter
1 tbsp. olive oil
2 pounds onions, cut in half lengthwise, and sliced 1/4 inch
1 tsp. sugar
salt and pepper

Soup:
Caramelized onions
1 tbsp. flour
1 tbsp. chopped fresh thyme
2 tbsp. cognac
3 1/2 C beef stock
Salt and pepper
French baguette, sliced 3/4 inch thick
1 1/2 C (++) gruyere, swiss, fontina cheese

Directions:
Directions:
1. Melt butter and olive oil in dutch oven/large frying pan
2. Add onions, stir to coat, sprinkle with sugar and cook, stirring as needed to keep onions from sticking. Cook until onions are a deep golden brown, about an hour
3. Remove from heat, season with salt and pepper (TASTE TEST!!! you won't be sorry)
4. Sprinkle carmelized onions with flour and stir to coat
5. Add thyme, cognac, salt and pepper, stir, cook on low for 5 mins
6. Add beef broth and simmer for 30-40 mins.
7. Toast bread slices very lightly on both sides
8. Ladle soup into broiler safe bowls on a baking sheet, top with bread and generous amounts of cheese
9. Broil until cheese is bubbly and golden
10. Serve immediately, watch out it's hot!!!
