2 tbsp. olive oil
1 large onion, diced
1/2-1 tsp crushed red pepper
1/2 pound ground beef/veal/pork
2 eggs
1 C grated parmesan cheese
1/4 C chopped italian parsley
1 C breadcrumbs
1/2 C water

Directions:
Directions:
1. Coat pan with olive oil, add onions, season with salt and pepper and cook 5-7 mins.
2. Add garlic and red pepper, cook 1-2 mins, cool
3. Combine other ingredients except for water
4. Add cooled onion/garlic mixture, generously salt, and mix with hands
5. Add water until mixture is just sticky
6. Test one small patty in a frying pan - add more salt, you'll probably need it
7. Brown meatballs on each side in frying pan with olive oil
8. Place on cookie sheet and bake @ 350 degrees for 15-20 mins
