1/4 C olive oil
1/4 lb pancetta or bacon
2 large spanish onions, diced
Salt
4 large garlic cloves, chopped
3 cans crushed tomatoes
1 can diced tomatoes
Italian seasoning

Directions:
Directions:
1. Coat large sauce pan with olive oil, add pancetta/bacon and cook 4-5 mins.
2. Add onions, season generously with salt, cook 6-7 mins.
3. Add garlic, cook 2-3 mins.
4. Add crushed/diced tomatoes
5. Season generously with salt/italian seasoning
6. Simmer 2-3 hours (longer is better)
