3 eggs
1 2/3 cups sugar
1 cup oil (or applesauce)
2 cups flour
1 tsp. cinnamon
1/2 tsp. salt
1 tsp baking soda
2 cups sliced or dices apples
1/2 cup walnuts or pecans, chopped
1 tsp. vanilla

Directions:
Directions:
Beat eggs and sugar together; slowly add the oil. Combine flour, cinnamon, salt and baking soda; fold into the egg mixture. Add the apples, nuts and vanilla. Pour into a greased 9x13 pan and bake at 325º for 45 minutes.
