2lbs Swiss chard,washed
4 tbsp margarine
3 tbsp flour
1 1/4 c milk
1 1/2 c (6oz) shredded Swiss cheese
1/2 tsp dried mustard
2 tbsp minced fresh chives or 2 tsp dried chives
Salt to taste
1/4 tsp pepper
1/4 tsp nutmeg

Directions:
Steam chard in a steamer or in a small amount of water, about 5 minutes. Stack the chard and slice into 1/2in strips. Prepare sauce by melting margarine in saucepan; stir in flour, mixing well, and cook 1 minute over moderate heat. Gradually stir in milk and cook, stirring constantly, until mixture thickens, about 8-10 minutes.Remove from heat and stir in 3/4 c cheese, dry mustard, chives, salt and pepper. Line the bottom of an ungreased 2qt baking dish with some of the chard; spoon about 1/3 of the sauce on top. Repeat two more times, alternating chard with sauce. Sprinkle remaining 3/4 c cheese on top and sprinkle with nutmeg. Bake in 350 degree oven, uncovered, for 20 minutes or until chard is heated through. Place under broiler 2-3 minutes, or until cheese is lightly browned.
