3/4 pound sweet Italian sausage, removed from any casing
1/2 cup diced onion
1/3 cup diced green pepper
1 1/2 cups grated sharp cheddar cheese
1 Tbl. flour
1 prepared pie crust or deep pie crust in pie pan or shallow casserole dish
1 Tbl. Chopped parsley or flakes
1/2 tsp. season salt or plain salt, if preferred
1/4 tsp. garlic salt
1/4 tsp. pepper
1 cup evaporated milk
2 eggs, well beaten

Brown sausage. Add diced onion and pepper to sautee briefly with browned sausage. Drain excess fat. Set mixture aside.

In a large bowl, mix cheese and flour. Gently stir in the sausage mixture to evenly distribute ingredients. Turn mixture in to the prepared pie crust and spread evenly but do not flatten or mash down.

In the now-empty bowl, beat together the salt, pepper, evaporated milk, and beaten eggs. Pour over the sausage mixture in the pie crust. Do not stir together with the ingredients in the pie crust, just let egg/milk mixture settle.

Bake at 375 degrees for 45 minutes or until a knife inserted in center slides out cleanly.

The kids call this Pizza Quiche. Works in baked small tart shells as appetizers. And if you process the chunky sausage, onion, and pepper in a food processor slightly after sauteeing, then turn out in to the crust and pour the liquid mixture over, it has a finer texture, but the flavor remains.
