2 ready-to-cook chickens about 2 lb each
1 tbsp. salt
1/4 tsp pepper
4 tsp paprika
2 tbsp. water
2 eggs
fine dry cracker meal
olive oil

Directions:
Wash and dry chickens and cut in serving-size pieces. In a flat dish blend salt, pepper and paprika with water. Add eggs and beat until well blended. Dip chicken first in egg mixture then in cracker meal to coat thoroughly. Place chicken on a rack and let stand half an hour for coating to dry. Meanwhile pour oil into a deep kettle or fryer to a depth of 3 or more inches. Heat oil to 360ºF on a deep fat thermometer or until a 1" cube of bread browns in about 60 sec. Place 2 or 3 pieces of chicken at a time in the oil. (If too many pieces are added at one time the temperature of the fat drops and chicken will be greasy.) Fry chicken 15 to 20 min or until tender and brown. Drain well on paper towels to remove excess fat.
