2 c sifted all purpose flour
6 tsp double action baking powder
1/4 c sugar
1 1/2 tsp salt
2 eggs beaten
1 3/4 c milk
1/4 c olive oil

Directions:
Directions:
Sift together flour, baking powder, sugar and salt. Combine egg, milk and oil and add to flour mixture. Stir just enough to moisten dry ingredients (batter should be lumpy). For each pancake pour about 2 tbsp. batter on preheated griddle. When bubbles appear on surface and edges are brown turn and bake second side. Serve with butter, syrup and sausages or bacon.
