3 tbsp. olive oil
3 green peppers thinly sliced
3 tbsp. minced onion
1/8 tsp minced garlic
6 stuffed olives chopped
1 tin (28 oz) tomatoes
2 tsp sugar
pepper
water
4 veal chops cut 3/4" thick
1 tbsp. flour
2 tbsp. dry white wine or water
1 tsp oregano

Heat 3 tbsp. oil in a saucepan. Add green peppers and fry until tender. Add onion and garlic. Cook stirring often until onion browns. Add olives, tomatoes, sugar, salt and pepper to taste. Simmer covered 20 min and add water if mixture gets too thick. Set aside and keep hot. Season chops with salt and pepper and sprinkle with flour. Heat about 2 tbsp. oil in a skillet. Add chops and brown over medium heat turning once. Add about 1/4 c water. Cover and simmer 20 min more or until chops are tender. Put chops on a platter. Measure wine and oregano into the hot skillet. Stir to mix in drippings and pour over chops. Top with hot tomato mixture.
