2 cups flour
1 1/2 tsp baking soda
2 tsp baking powder
1 1/2 tsp salt
2 tsp cinnamon
2 cups sugar
1 1/2 cup oil
4 eggs
2 cups grated carrots
1 can pineapple tidbits
1/2 cup nuts
3 1/2 oz coconut

Directions:
Directions:
Sift flour, baking power, baking soda, salt and cinnamon. Add sugar, oil and egg mix well. Add carrots, pineapple , nuts and coconut blend thoroughly. Grease and flour 3 9" round cake pans. Pour evenly into pans. Bake at 350 degrees 35-40 min or until toothpick comes out clean.

Cream cheese frosting:
1/2 cup butter
8 oz cream cheese
1 set vanilla
1 cup powered sugar

Cream butter, cream cheese and vanilla until smooth, gradually add powered sugar.
