Ingredients:  
2 to 3 limes
3 Tbsp. olive oil
1 tsp. cumin
¼ to ½ tsp. hot pepper flakes
¼ c. each of finely chopped parsley & coriander (if using dried – 1 tbsp each)
½ to 1 tsp. salt
2 cans black beans
3 c. fresh/frozen cooked corn kernels
1 lg sweet red pepper, chopped
4 green onions, chopped
3 tomatoes, chopped

Directions:
Directions:
1. Grate peel from one lime.
2. Squeeze ¼ c. juice from other limes.
3. Whisk oil with peel & juice, cumin & pepper flakes. Do not add salt.
4. Stir in parsley & coriander.
5. Rinse beans. Test salt & add if necessary.
6. Add beans and corn to dressing but do not stir.
7. Add pepper, green onion and tomatoes to salad.
8. Mix carefully in order to not break the beans.
