1 1/4 c packed light brown sugar
6 tbsp margarine
1 1/2 c chunky applesauce
2 eggs
2 tsp vanilla extract
2 c unbleached flour
2 tsp baking soda
1 1/2 tsp pumpkin pie spice
1 1/2 c rolled oats
1/2 c raisins
1/4 c chopped walnuts

Directions:
Preheat oven to 350 degrees. Coat a 9x13in baking pan with nonstick spray. Using an electric mixer set at medium speed, beat sugar and margarine until light and fluffy. Add applesauce, eggs, and vanilla. Beat until well blended. In a large bowl, whisk together flour, baking soda, pumpkin pie spice, and oats. Stir in raisins and walnuts. Add oat mixture to applesauce mixture. Stir well. Spread in prepared pan. Bake until a toothpick inserted in center comes out clean, about 30 minutes. Cool in pan on wire rack. Makes 16 bars.
