1/2 fresh pineapple, cut into chunks
1/4 c. apple juice
1/2 cantaloupe, cut into 12 pieces
12 strawberries
2 peaches, peeled and halved
1/4 c. fat free plain yogurt
Mint sprigs

Directions:
Directions:
Place 1 c. pineapple and the apple juice into a 2 qt. saucepan. Bring to a boil, reduce heat, and simmer, stirring occasionally, for 10 minutes. Set aside to cool. Coat a grill rack with nonstick spray. fire up grill and heat for 10 minutes. Place rack on grill. Thread cantaloupe, strawberries, peaches, and any remaining pineapple chunks onto flour 16 in skewers, and place on grill. Heat for 2 minutes. Turn and heat for 2 minutes more. Meanwhile place cooked pineapple/apple juice mixture and yogurt in blender. Process on low until blended. Transfer to a serving dish, and garnish with mint. Serves 4.
