1 tbsp olive oil
1/2 c finely chopped onions
1/2 c finely chopped green bell peppers
1 tsp minced fresh garlic
1 tsp chili powder
1/4 tsp dry mustard
1/8 tsp ground red pepper
1 can (28 oz) crushed tomatoes
1 can (15 oz) black beans, rinsed and drained, or 2 c cooked
2 c cooked quick-cooking brown rice

Directions:

In a large nonstick skillet, heat oven over medium high heat. Add onions and green peppers, and cook, stirring often, until onions are translucent, about 3 minutes. Add garlic, chili powder, mustard, and red pepper to onion-pepper mixture. Bring to a boil. Cover and cook for 10 minutes. Serve over rice. Serves 4
