Ingredients:  
4 tbsp margarine or butter, divided
1 medium onion, finely chopped
1/2 c diced celery
1 1/2 c crushed cracker or bread crumbs
1 egg, beaten
1/2 c clam juice
1 tbsp lemon juice
1 c seafood (use chopped clams, scallops and/or shrimp)
8 flounder or sole fillets
1/4 c seasoned bread crumbs
paprika

Directions:
In skillet heat 2 Tbsp margarine. Saute onion and celery for 5 minutes. Add cracker crumbs, egg, clam juice, lemon juice and seafood. Spread some of the mixture on each fillet and roll up.Place seam side down in greased baking pan. Combine seasoned bread crumbs and 2 tbsp melted margarine; sprinkle over fish rolls. Sprinkle with paprika. Bake in a preheated 400 degree oven, about 25 minutes or until fish flakes when tested with a fork. 4 servings.
