1 lb veal cutlets
3 tbsp soy sauce
1 tbsp sesame oil(optional)
2 tbsp dry white wine
2 tbsp sugar
1 cup chicken broth
1/4 cup lemon juice
1 tsp lemon peel, grated
1/4 cup cornstarch
1/4 cup vegetable oil
1/2 cup shredded carrots
6 green onions, thinly sliced
1-6 oz pkg frozen snow peas, thawed
Chinese cabbage, shredded

Pound veal thin; cut into1/2 in strips. Combine soy sauce, sesame oil, wine; pour over veal. Refrigerate at least 30 minutes. Prepare seasoning sauce by combining sugar, broth, lemon juice, lemon peel, cornstarch, blend thoroughly; set aside. Heat oil in wok or large skillet. Drain veal; save marinade. Add veal to wok; stir-fry 3 minutes; make well in center. Blend together seasoning sauce and marinade; add to center of wok; bring to boil without stirring, about 1 minute. Add carrots, onions and snow peas; cook 1 minute, stirring rest of ingredients with sauce. Serve on a bed of shredded Chinese cabbage. Approx. 4 servings.
