4-6 lbs. veal leg roast
1 clove garlic, slivered
1/4 cup Dijon mustard
1 tsp. dried thyme or tarragon
Salt and pepper
8 strips bacon
1/2 cup margarine or butter melted
3/4 cup dry white wine or water

Directions:
Directions:
Cut slits in veal;insert slivers of garlic. place roast on rack. Rub mustard over veal. Sprinkle with thyme, salt and pepper. Wrap bacon around roast, tucking ends under meat. Spread margarine over bacon and meat. Pour wine into pan. Bake in 350 degree oven about 30 minutes per pound. Baste frequently while cooking. Remove roast. Cover with foil and let stand 10 minutes before carving. 6-8 servings.
