1 1/4 C. sifted flour
1 1/2 t. baking powder
3/4 t. salt
1T. sugar
1 egg, well beaten
1 C. milk
3 T. melted shortening

Directions:
Directions:
Sift dry ingredients together. Combine egg and milk, add to flour along with shortening. Mix just until flour is dampened - batter will be lumpy.

Bake on a hot, greased griddle until brown on both sides, turning once.

Serve with butter and syrup.

This recipe came from the little "grocery store" cookbook, circa 1968. It's probably the same as every pancake recipe anywhere, but it's the one I've used forever - kids and grandkids have grown up on these pancakes:-)

You can make them plain or fancy; I add pecans, blueberries, etc, depending on the mood and who's eating. Use plain syrup, top them with fruit or make funny faces - use your imagination!
