3/4 lb. rhubarb (about 3 cups- diced)
1/2 c. sugar
2 tbsp. cornstarch
1/4 tsp. salt
1 egg
3/4 c. white syrup (half maple syrup is good)
1 tbsp. melted butter

Directions:
Directions:
Line a 9" pie pan with pastry. Place rhubarb in pie shell. Combine sugar, cornstarch and salt. Add eggs and beat well. Add syrup and melted butter. Pour over rhubarb and cover with pastry. Bake in a hot over 450º for 15 minutes. Reduce heat to 350º and bake 30 minutes longer until crust is nicely browned.
