1 lb. sliced bacon, diced
1 medium yellow onion, diced
6 eggs, lightly beaten
4 cups frozen shredded hash brown potatoes
2 cups shredded sharp or mild cheddar cheese
1 1/2 cups small curd low fat cottage cheese
1 1/4 cups shredded Swiss cheese

Directions:
Directions:
In a large skillet, cook bacon and onion until bacon is crisp. Drain. Mix together remaining ingredients. Stir in bacon mixture. Transfer to a greased 9x13 pan. Bake, uncovered, at 350º for 35-40 minutes or until eggs are set and bubbly. Let stand for 10 minutes before serving. Serves 8-10.
