2 c (500 ml) frozen hash brown potatoes
1/2 tsp (2 ml) celery or seasoned salt
3/4 c (175 ml) sliced fresh mushrooms
1/2 c (125 ml) chopped onion
1/2 c (125 ml) chopped green pepper
5 eggs
1/2 c (125 ml) milk
pinch pepper
1 c (250 ml) shredded cheddar cheese
6 slices bacon cooked and crumbled

Spread potatoes in an even layer in greased 10" (25 cm) microwave-safe quiche dish or pie plate. Microcook on high (100%) 2 min. Sprinkle with salt and mix well. Sprinkle mushrooms, onion and green pepper over potatoes. Beat together eggs, milk and pepper. Pour mixture over vegetables in dish. Cover loosely with waxed paper. Place dish on 1" (2.5 cm) high microwave-safe rack. Microcook on medium-high (70%) 15 to 20 min or until set. Sprinkle cheese over dish. Let stand until cheese is melted. Sprinkle with bacon.
