1 Egg (lightly beaten)
1 med Onion (finely chopped)
1/4 cup salsa
2 Tbsp Chili Powder
2 Cloves Garlic (minced)
1/2 tsp. Salt
1 pound Ground Beef
1 Corn Muffin Mix (8.5 oz)
1/2-1 cup Cheese (shredded)

Directions:
Preheat oven to 350º. In large bowl combine egg, onion, salsa, chili powder, garlic and salt; add ground beef and mix well. Spread meat mixture in bottom of pie plate. Prepare corn muffin mix according to package directions. Spread corn muffin batter over meat mixture. Bake about 50 minutes or until meat thermometer measures 160º. Spread cheese on top, cover with foil and let stand 10 minutes before serving. If desired serve with additional salsa and sour cream.
