3-4 Ripe mangoes
3 T. Olive oil
1 large red pepper diced
1 large yellow pepper diced
1 large orange pepper diced
1 jalapeno pepper diced (very small)
1 small onion diced
2 T. garlic
1.5 C. Steamed corn
1 small can black bean
The juice of 1 orange
The juice of 2 limes
The juice of 1 lemon
1 tsp. Sea salt
1/2 tsp. cumin
Desired amount of cilantro for flavor

1. Wash and drain all vegetables/beans, combine in large bowl- add olive oil, juice and seasoning
2. Steam and add corn to bowl
3. In a medium to large-sized pot, cook all ingredients on low heat without lid on
4. Cook until ingredients are tender, and excess juice has dissipated
5. Take off heat, add cilantro
6. Cover, and place in refrigerator to chill

Serve with chips- or use as a garnish, such as on chicken tacos or taco salad

Add a splash of pineapple juice if you care for salsa to be extra fruity, or if mangoes are not as flavorful as you had hoped.
By cooking the vegetables and mangoes down, it enhances the flavors. Serve cold for best taste.
