Berry Delight Recipe

1 ½ cp graham cracker crumbs
1/3 cp melted butter
Combine and press into a 9 x 13 pan. Save ¼ cp for garnish

16 oz marshmallows
½ cp milk
12 oz Cool Whip
Combine the milk and marshmallows in a saucepan and heat slowly until the marshmallows melt and blend with the milk. Cool completely before stirring in the Cool Whip.

1 bag of frozen mixed berries, thawed
3 Tbls cornstarch
Combine the contents of the bag and the cornstarch and cook over med heat until thick. Cool completely.

You want to start the above directions the night before or early in the day. Get your marshmallow/milk mixture and the berries thickened and give them plenty of time to cool. They shouldn't be warm at all.

Near serving time make the graham cracker crust and stir the marshmallow mixture into the Cool Whip. Pour half the Cool Whip mixture over the crust. Pour all of the berries over that. Top with the rest of the Cool Whip mixture. Pull a knife thru it to create a design with the berries. Sprinkle with the reserved graham cracker crumbs.

I remember this as being Mom's special occasion recipe. She didn't make it a lot but I was always super excited when she did because I loved it. It takes a little prep work beforehand but then you can put it together quickly.
