2 tbsp. (30 ml) butter
1 small tomato seeded and chopped
1/4 c (50 ml) chopped green pepper
1/4 c (50 ml) chopped green onion
1 tbsp. (15 ml) canned chopped green chilies drained
pinch ground cumin
6 eggs
2 tbsp. (30 ml) plain yogurt or milk
1/4 tsp (1 ml) salt

Melt butter in 2 c (500 ml) microwave-safe measure. Stir in tomato, green pepper, green onions, chili and cumin. Microcook on high (100%) 2 min or until vegetables are cooked. Beat together egg, yogurt and salt in 1 qt (1 L) microwave-safe measure. Microcook on medium-high (70%) 2 min longer or until eggs are set. Stir. Cover and let stand 2 to 3 min before serving.
