1 1/2 cups sugar
3/4 cup margarine
2 eggs
3 cups flour
1/2 teaspoon baking soda
2 teaspoon baking powder
1 teaspoon salt
1/2 cup finely snipped, dried apricots
1/3 cup sour milk (add 1 T lemon juice to 1/3 cup milk and let sit while making cookies)
1/2 teaspoon vanilla
apricot jam

Preheat oven to 375º. Make sour milk as described above. Cream together sugar, margarine and eggs. Sift together flour, soda, baking powder and salt. Add apricots, the dry ingredients and sour milk to the creamed mixture. Add vanilla and mix well. Drop by teaspoonful on ungreased cookie sheet. Make a hollow in the top of each cookie mound. Drop in a scant teaspoon of apricot jam into each hollow. Bake 12-15 minutes.
