Ingredients: Topping 3 tbsp. (45 ml) packed brown sugar 3 tbsp. (45 ml) chopped nuts
Batter 1 1/2 c (375 ml) all purpose flour 1 1/2 c (375 ml) natural bran 1 tsp (5 ml) baking powder 1 tsp (5 ml) baking soda 1 c (250 ml) mashed ripe bananas (about 3) 2 eggs beaten 3/4 c (175 ml) packed brown sugar 3/4 c (175 ml) oil 1/2 c (125 ml) plan yogurt 1 tsp (5 ml) vanilla

Directions:Topping Combine sugar and nuts and set aside.
Batter Stir together flour, bran, baking powder and baking soda and set aside. Combine bananas and eggs in large mixing bowl. Stir in sugar, oil, yogurt and vanilla. Add dry ingredients all at once and stir just until moistened. Place large paper liners in a microwave-safe muffin pan and fill each 3/4 full of batter. Sprinkle with 1 tsp (5 ml) topping mixture. Microcook 6 muffins at a time on high (100%) 2 to 2 1/2 min or until moisture has just disappeared from surface of muffins. Let stand 2 min before removing from pan. |

Notes: Banana Loaves To bake as loaves grease two 9 X 5 X 3" (1.5 L) microwave-safe loaf pans. Spread half of topping mixture in each pan. Divide batter between pans. Microcook one at a time on medium-high (70%) 8 to 9 min or until moisture has just disappeared from surface of loaves. Let stand 5 min before removing from pan.
