1 whole chicken breast skinned split and boned
1 egg
1 tbsp. (15 ml) milk
1/2 c (125 ml) fine dry bread crumbs
1 tbsp. (15 ml) grated parmesan cheese
1/2 tsp (2 ml) crushed dried oregano leaves
2 tbsp. (30 ml) oil divided
dipping sauce (optional)

Cut chicken crosswise into strips about 1/2" (1 cm) thick. Beat together egg and milk. Combine crumbs, cheese and oregano. Dip chicken into egg mixture and then into crumbs. Preheat flat-bottomed browning dish as directed by manufacturer - usually 4 to 6 min. (If you have a non-stick browning dish you can use less oil.) When browning dish is hot add 1 tbsp. (15 ml) of the oil and half the chicken pieces. Microcook on high (100%) 1 min. turn pieces over. Microcook on high (100%) 1 min longer or until chicken is cooked and browned. Drain on paper towels. Clean and reheat browning dish. Repeat with remaining oil and chicken pieces. Serve with dipping sauce if desired.
