1 Knorr Hollandaise Sauce Mix
1/2 c (125 ml) butter
1/2 c (125 ml) cold water
1/2 c (125 ml) unsweetened orange juice
1 tbsp. (15 ml) grated orange peel
2 pkg fresh spinach (10 oz/280 g each) cooked and drained
4 English muffins split and toasted
8 eggs poached

Melt butter in small saucepan. Stir in Knorr Hollandaise Sauce Mix with wire whisk. Gradually whisk in water and orange juice. Bring to a boil stirring frequently. Add orange peel and let simmer for 1 min. Arrange spinach on toasted muffin halves and place poached eggs on top. Pour sauce over eggs and serve.
