8 hard-cooked eggs shelled
1 apple halved cored and diced
1/4 c (50 ml) chopped pecans or walnuts
1/4 c (50 ml) unflavored yogurt
1 tbsp. (15 ml) mayonnaise
1 tsp (5 ml) curry powder
1 tsp (5 ml) Dijon mustard
1/2 tsp (2 ml) salt
pinch pepper
8 slices whole wheat bread
1 c (250 ml) alfalfa sprouts

Chop or grate hard-cooked eggs. Combine eggs with apples and nuts. Combine yogurt with mayonnaise, curry powder, mustard, salt and pepper. Mix yogurt mixture into eggs. Arrange bread in a single layer on work surface. Spread 1/4 of the egg mixture on 4 slices of bread. Top egg mixture on each slice of bread with an equal amount of sprouts. Top with remaining 4 slices of bread.
