1 egg
1/4 tsp (1ml) salt
pinch pepper
1 tbsp. (15 ml) milk
1 tsp (5 ml) butter or oil
1/2 pita bread
1 tsp (5 ml) mayonnaise
3 thin slices of tomatoes
1 large lettuce leaf

Directions:
Directions:
Beat egg lightly with salt, pepper and milk. Heat butter or oil in an 8" (22 cm) omelette pan on medium heat. Add egg mixture. Cook on one side until set - about 1 min. Flip. Cook second side until set. Slip out of pan onto a plate and fold in half. Gently open pita to form a pocket. Spread one side of the inside pita pocket with mayonnaise. Insert the folded egg. Arrange tomato slices and lettuce on top of egg. Serve warm or cold.
