8 slices bread
1 tbsp. (15 ml) Dijon mustard
1 tbsp. (15 ml) mayonnaise
4 slices cooked turkey, chicken or ham
4 cheese slices (swiss or cheddar)
3 eggs
1/4 c (50 ml) milk
1/2 tsp (2 ml) salt
pinch pepper
2 tbsp. (25 ml) butter or oil

Arrange bread on work surface in a single layer. Combine Dijon mustard with mayonnaise. Brush 4 slices of bread with mustard mixture. Arrange a slice of meat and then cheese on the mustard coated pieces of bread. Top with remaining 4 pieces of bread. Beat eggs with milk, salt and pepper in a shallow baking dish. Dip sandwiches into egg mixture on both sides and allow sandwiches to rest in egg mixture until it is all absorbed. Heat butter or oil in a large skillet. Cook sandwiches (in batches if necessary) until browned on both sides and cheese melts.
