Jello:
2 3-oz packages of jello, apricot flavor is traditional
2 bananas, diced
1 20-oz can crushed pineapple, drained; save the juice
2 cups boiling water
2 cups miniature marshmallows
2 scant cups ice cold water

Topping:
2 tablespoons butter
2 tablespoons flour
1/2 cup sugar
1/2 cup pineapple juice
1 egg, beaten
1 3-oz package cream cheese, softened
1/2 pint whipping cream

Directions:

Mix the jello with the boiling water, add the marshmallows, and stir until the marshmallows are melted. Add the cold water. Pour into a 9x13 glass baking dish and add the diced bananas and drained pineapple. Cover and refrigerate, preferably overnight.

For the topping, melt the butter in a small saucepan and add the flour to make a roué. Do not brown too darkly. Add the sugar and the pineapple juice, and boil until thick, stirring constantly. Remove from the heat, and beat the egg. Add some of the boiled sauce into the beaten egg, slowly until nearly half of the sauce is mixed with the egg. Pour the saucy egg mixture into the saucepan with the rest of the sauce. Boil again until think. Add the softened cream cheese and stir until completely mixed. Refrigerate, preferably overnight. Whip the whipping cream into soft peaks, then fold carefully into the sauce mixture. Once folded together, spread over the jello and refrigerate until served.

Our family friends, the Lacy Family, brought this to our childhood Thanksgiving Day meals, and we all love it. You can make it with different flavors, as desired. I use a little lemon juice on the banana pieces to keep them from turning brown, but you can make it without the fruit and it is a very good dish that way as well. It displays very nicely in a trifle bowl, or other fancy glass dish. At Thanksgiving, it was served alongside the pumpkin pie. In my mind, Thanksgiving is not complete without Mrs. Lacy's jello.
