6 eggs
1 Cup sugar
1/2 teaspoon salt
4 Cups whole milk
1 teaspoon vanilla
-freshly grated nutmeg

Butter 8- 6 oz, ovenproof custard cups and set aside

Preheat oven to 425 degrees.

In bowl, use a mixer to beat the eggs well. Gradually add the sugar and salt.

In a medium pot, scald the milk. (Over medium heat, constantly stir the milk, scraping the bottom and sides of the pot, until tiny bubbles form around the edges of the pan. Will occur just before reaching the boiling point. Take off heat and let cool to 110 degrees, which takes about 8 minutes.)

Slowly stir the scalded milk into the egg mixture. Add the vanilla and stir well. Pour mixture in prepared ramekins. Top with freshly grated nutmeg.

Place ramekins in a pan that has enough hot water to come halfway up the side o the ramekin. Place pan in 425 degree oven and bake 10 minutes. reduce heat to 325 and cook for 30 -40 more minutes. Insert knife blade into middle of custard. When knife comes out clean, custard is done.

Serve either warm or cold. If serving cold, let come to room temperature then cover with plastic wrap before storing in refrigerator.
