3 lb. sirloin roast or 1 leg of lamb cut into cubes 2 inches square and 1/2 inch thick
1 large Spanish onion cut in half, then long thin slices
2 T. olive oil
1/2 cup sherry or red dry wine
Sprinkle of black pepper
1 T. salt
1 t. tarragon fresh or dried
4 tomatoes
4 hot peppers
1 cup Bell pepper cut into 1 1/2 inch squares
1/2 bunch Fresh cilantro chopped
2 stalks green onions chopped

Directions:
Directions:
Layer cubes of meat in deep bowl, sprinkle each layer with salt (heavy) and add a little black pepper, cover with 1/3 of the onions, repeat till all meat used. Add oil, wine, and tarragon. Marinate for 2 or 3 hours, turning occasionally or even overnight. Skewer meat and vegetables separately. Cook 20 minutes or until desired temperature.

When finished, place all together in bowl. Put green onions, cilantro, and dry onions over top and serve with Assyrian steamed rice. Serves 6-8 people.
