1 lb dried white beans
10 cups chicken broth (divided)
2 onions, diced
1 tbsp olive oil
6 cloves garlic, minced
2 cans green chiles
1 tbsp cumin
2 tsp dried Mexican oregano
1 tsp cayenne pepper
1/2 tsp white pepper
4 cups cooked diced chicken
8 oz sour cream
2 cups shredded Jack cheese

Directions:
Directions:
In a large stock pot, combine 6 cups of chicken broth and dried white beans. Simmer over low heat for 2 hours or until beans are softened.
In another pan, heat oil and saute onions until translucent. Add garlic, spices and chicken. Saute a few more minutes and then add to the beans in the stock pot. Add the remaining chicken broth and simmer another hour.
Right before serving mix in the sour cream and cheese and stir til completely combined.

Serve with tortilla chips, cilantro and more sour cream and cheese, if desired.
