3 lbs. ground chuck or 1 ½ lbs. ground chuck and 1 ½ lbs. ground lamb or all lamb with bit of ground pork added – to total 3 pounds
3 t salt
1 egg
1 cup water
1 large onion, Spanish or purple, diced
1 large bell pepper or 2 small ones, diced
1/2 bunch green onion, tops on, diced
1/2 bunch parsley, diced

Directions:
Directions:
Place meat in a large bowl. Add salt, and gradually, while punching and blending (by hand only), add water. When meat starts to crackle at being punched, add raw egg and blend some more. Next add all diced vegetables until well blended. Shape into ¼ pound patties, somewhat elongated and 3/4 inch thick. Broil under broiler or over charcoal which has turned ashen white.
