2 lbs ground chuck
1 lb. ground lamb
1/2 cup water
1 egg, slightly beaten
3 teaspoons salt, scant (one for each lb.)
1 medium sized onion, finely chopped
4 green onions, tops finely chopped
1 green pepper, finely chopped
2 T parsley

Directions:
Directions:
Place meat in a bowl, add water and work in with your hands until well blended. Work in the egg and salt. Add the finely chopped vegetables and mix in until well distributed. Shape into 8 or 10 oval patties (like shape of hand when cupped). You may dip hands in water to help shape patties smoothly and lightly without packing the meat mixture. Barbecue over hot, grey coals or broil allowing about 4 minutes each side if rare or a little longer for medium rare. Also can be used in Peda Bread Sandwich which Sunset Magazine featured as “Fresno Sandwich." Split bread in half, add meat, sliced tomatoes, hot chilies, fresh tarragon or sweet basil.
