1 orange
1 cup powdered sugar
1 tsp. baking powder
½ cup marmalade
3 eggs
¼ cup sifted flour
1 cup ground almonds
Powder sugar to dust
Optional: small carton whipping cream and 1 rind of orange

Directions:
Directions:
Preheat oven to 350º Grease 8” spring form pan and line with wax paper. Put orange in pan; cover with water and simmer 1 hour or nuke for 25 minutes until soft. Cut orange in half, remove seeds and puree in food processor Beat eggs and sugar until pale and thick. Fold in flour, baking powder, almonds and orange puree. Pour into tin and bake one hour. Melt marmalade in small pan; then pour through a sieve, pressing to get all juice out. Spread rind free juice over cake. When cool, sift powdered sugar over cake. Mix whipped cream with the orange rind and serve.
