Directions:Fry or bake the bacon till crispy. Drain on a paper towel and chop to small pieces. Using Gloves cut the jalapenos in half and remove the seeds and inner membrane. Set upside down on a paper towel to drain.
Smush the cheddar cheese into the cream cheese until well blended. Add the cilantro and smush it all together some more. Using a spoon, scoop the cheese mixture into the jalapenos. There should be enough to fill the peppers quite full. It can all be refrigerated at this point
To finish them up top the jalapenos with bacon, heat in a 300* oven for 10 min and serve. You can also microwave them for a couple of minutes if you don't have an oven handy. |

Notes: These are technically supposed to be wrapped in bacon but I can't figure out how to get the bacon to cook properly if you wrap it uncooked and the cooked bacon isn't flexible enough to wrap around the jalapeno. My solution is to just crumble the bacon and put lots of it on top.
If you don't use gloves to cut and clean the pepper don't touch any part of your head or other sensitive body parts for about 24 hrs. The pepper oil gets on your fingers and is almost impossible to wash off and if you get it anywhere near your eyes, nose, etc It will burn like crazy!!! Consider yourself warned!
