3 eggs (beaten)
1c. oil
2 c. sugar
2 c. coarse shredded zucchini
2 tsp. vanilla
3 c. sifted four
1 tsp. soda
1/2 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
1/2 c nuts (optional)

Directions:
Directions:
Beat sugar and eggs until creamy and add the oil and vanilla. Add the dry ingredients and last add zucchini and nutmeats.
Pour into 2 loaf pans that have been greased. Bake one hour at 325 degrees.
