6 large vine ripe tomatoes, chopped OR 1 lrg can crushed tomatoes, drained
1 bunch cilantro (chopped extra fine)
3 jalapenos (w/no seeds)
1 yellow onion (diced fine)
1 Tbls minced garlic
2 Tbls olive oil
2 Tbls lemon juice
2 Tbls lime juice
1 Tbls sugar
2 Tbls salt (to taste) (2 tsp) (use less salt if using canned tomatoes)

Directions:
Directions:
Chop fresh tomatoes or drain canned tomatoes depending on which you are using. Cut jalapenos in half and clean out seeds and inner ribs, chop them up and add to tomatoes. Chop cilantro as fine as you can, dice the onion and put them in with the tomatoes. Add garlic, oil, citrus, sugar and salt. Stir it all together and then put it in a food processor or blender in batches. Process until fairly smooth and pour in containers.

Best with fresh tomatoes but it's nice to have an option for winter when the fresh tomatoes are not the best.
