8 peeled & boiled potatoes (red or yukon gold)
5 slices bacon
1 tbsp flour
1/2 c water
1/2 c apple cider vinegar
2 tsp salt
3/4 tsp granulated sugar
1 onion, thinly sliced
2 tbsp flat leaf Italian parsley, chopped

Directions:
Directions:
Fry bacon in sauté pan. Remove from pan & drain on paper towels. Once cooled, crumble & set aside.
In bacon fat, add flour & mix in well. Gradually add in water & vinegar while pan is over medium heat. Cook until mixture boils & thickens. Add salt, sugar & onion. Once onion is cooked until soft, remove from heat.
Cut potatoes into 1/2" slices. Add bacon to potatoes. Pour warm dressing over potatoes. Mix lightly & sprinkle with parsley.
