3 eggs
1 1/2 c sugar
3 tsp vanilla
1 c oil
2 c flour
1 tsp salt
1 tsp soda
1/2 tsp baking powder
2 tsp cinnamon
1 c nuts (optional)
2 c peeled, grated and blended (in blender) squash

Directions:
Directions:
PREHEAT oven to 325º.

Beat eggs until light and foamy.
Add oil, sugar, squash and vanilla
Mix.
Sift flour, salt, soda, baking powder and cinnamon.
Mix in until blended.
Grease and flour 3 1# loaf bread pans.
Split and pour into bread pans.
BAKE for 1 hour.

Cool.
Run a knife around the edges to remove from pans.

Raisins are good too!
Bake it in a cake pan and serve with whipped cream as a dessert. Yum!

Bread freezes well.

Squash can be prepared at harvest time and frozen for use later too.
