Turkey Pot Pie Recipe

1 cup turkey (or chicken) , cubed
1 1/2 cup mixed vegetables*
2 Tbsp butter
1 clove garlic
1/4 cup onion, chopped
1 Tbsp corn starch
1 1/2 cup milk
1 can Cream of Mushroom soup
2 pie shells (if using frozen - let them thaw)

*I like potatoes, carrots, celery, corn, & green beans. Just cut into bite size pieces & boil until almost done. Or, you can use a can of Veg-All.

Preheat oven to 350º. Melt butter in large skillet & saute the onions & garlic until translucent. Stir the corn starch into the milk & pour over the onions. Stir, over medium heat, until the mixture comes to a boil. You can add a little salt & pepper, to taste, at this point. Add the cream of mushroom soup & heat through. Add the turkey and vegetables and remove the skillet from heat.

Place pie shell into a pie plate. Carefully transfer your filling into the shell. Place the second pie shell over the filling so it covers the entire pie. Using the tines of a fork, gently press along the outer edges of the pie to "seal". With a sharp knife, cut a few slits on the top of the pie. Set pie on cookie sheet & bake 30-35 minutes.
