Garlic Roasted Potatoes Recipe

3 pounds small red potatoes
1/4 cup olive oil
1 1/2 tsp kosher salt
1 tsp freshly ground black pepper
2 T minced garlic (6 cloves)
2 T minced fresh parsley

Directions:
Directions:
Preheat oven to 400º
Cut potatoes in half or quarters. Place in a ziplock bag along with the oil, salt, peper, and garlic.
Toss until potatoes are well coated.
Roast in oven 45 minutes to 1 hour stirring every 15 minutes.
Remove from oven and toss with parsley.
