1 (approx. 2 lb) head cabbage cut into 1 in" steaks stem side up
1 1/2 T olive oil
2-3 garlic cloves smashed
kosher salt
freshly ground black pepper

Directions:
Directions:
Preheat oven to 400º
Pull outer leaf off of cabbage and cut from top to bottom into 1 " slices.
Rub both sides of cabbage with smashed garlic.
Brush both sides of cabbage with olive oil.
Sprinkle both sides of cabbage with salt and pepper.
Roast on middle rack for 30. Flip and roast another 30 minutes until edges are brown and cabbage is soft.
