3/4 cup lard (not shortening)
3/4 cup flour
4 oz pork sausage
8oz can red chili sauce
1 tsp Garlic powder
1/2 tsp chili powder
1 tsp salt
1 tsp black pepper
3 cups boiling water

Filling
1/2 Med Onion chopped
1 lb ground beef

Tacorito Assembly
6 Large Flour Tortillas
2 cups shredded cheddar cheese
3 cups shredded iceberg lettuce
1 large tomato diced
1/4 cup onion diced
Sour cream

Sauce Prep
Sauce can be made up to five days in advance and can be frozen for future use.

In large skillet, brown sausage and the remove and set aside.
Insame pan add lard to melt, slowly add flour consistanly stiring. Cook for 2-3 minutes once smooth.

Add sausage, chili sauce, garlic powder, chili powder, salt and pepper. Mix Well.

Add BOILING water and stir until thick.

Sauce is now ready to use for Tacarito or store for up to five days in refrigerator.

For use make sure your sauce is thicker than a gravy, but still able to "flow".

Filling Prep

Place chopped onion in skillet and cook till tender then add ground beef and brown. Drain fat.

Tacarito Assembly

Pre Heat Oven to 450 degree

Place tortilla on large oven proof plate. Add 1/6 the beef mixture, add generous amount of cheese to cover meat, add shredded lettuce to cover cheese.Roll burrito and tuck the ends on the bottom so it won't fall open.

Cover with saucemake sure ther is plenty of sauce, don't be skimpy, cover with more cheese and place in the pre heated oven until cheese is bubbly, about 10-12 minutes.

Remove from oven and add lettuce, tomato and onin to one side and dolip with sour cream.
