1 tbsp. smoked paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp cayenne pepper
3/4 tsp white pepper
3/4 tsp black pepper
1/2 tsp salt
1/2 tsp thyme
1/2 tsp oregano
4 boneless skinless chicken breasts
Alfredo Sauce:
1 stick butter, melted
2 cloves garlic, crushed
1/2 cup flour
2 pints heavy cream
1 tsp ground pepper
1 cup shredded parmesan
Fettuccine, cooked

Directions:
Directions:
Mix together blackened spice mix ingredients. Coat each chicken breast with about 1 tbsp. of spice. Cook in vegetable oil over medium heat until juices run clear about 15 minutes.
To make Alfredo: melt butter and sauté garlic, add flour. Brown for 1 minute. Add cream and pepper. Whisk until thickens. Add cheese and stir until smooth and cheese is melted. Serve with chicken over pasta.

I like to make up the blackened spice mix to keep on hand. Also great chicken for salads and so forth.
